Passion Fruit Mint Cooler

A bright tropical mocktail with passion fruit, lime, mint, and sparkling water.
Tart passion fruit purรฉe gives this cooler an intense tropical base, softened with simple syrup and freshened with lime and mint. Served over plenty of ice and finished with sparkling water, it is ideal for warm-weather menus and alcohol-free entertaining.
Ingredients
- 200 g Andros Passion Fruit Frozen Purรฉe, thawed
- 80 ml fresh lime juice
- 70 ml simple syrup
- 16 fresh mint leaves, plus extra for garnish
- 600 ml chilled sparkling water
- Ice cubes
- 4 lime wedges
- 2 tbsp fresh passion fruit pulp, optional
Method
- Gently clap the mint leaves between your hands and place them in a large jug.
- Add the passion fruit purรฉe, lime juice, and simple syrup, then stir thoroughly.
- Fill four tall glasses with ice and divide the passion fruit mixture between them.
- Top with chilled sparkling water.
- Stir gently and garnish with mint, lime, and a little fresh passion fruit pulp if using.
- Serve immediately while well chilled and sparkling.
Storage guidance
- Keep frozen at or below -18ยฐC.
- Once thawed, keep refrigerated and consume promptly.
- Do not refreeze after complete thawing.
- Cook thoroughly before serving where applicable.
