The tongue of a pig is a nutritious, versatile cut featuring an arched, papillae-dotted dorsal base that tapers to an elongated tip, with a layer of fatty tissue underneath. Fresh pork tongue has a grayish-white color and firm, elastic elasticity. Because of its structure, the outer membrane cannot simply be peeled off like beef tongue; instead, it requires scraping or blanching after an initial boil. It is rich in protein, iron, zinc, and B vitamins. While it requires a long, slow braise or boil (1 to 2 hours) to achieve complete tenderness, it yields a juicy bite that absorbs marinades, spices, and sauces exceptionally well.

Ingredients
- 2 pork tongues
- 1 onion, chopped
- 1 carrot, chopped
- 2 celery stalks, chopped
- 3 garlic cloves
- 500 ml red wine
- 750 ml chicken stock
- 2 thyme sprigs
- 2 bay leaves
- 1 tbsp butter
Method
- Blanch tongues for 10 minutes, drain and place in a clean pot.
- Add vegetables, garlic, wine, stock and herbs; simmer gently until tender.
- Peel the tongues while warm, then chill briefly for neat slicing.
- Strain and reduce the braising liquid until glossy; whisk in butter.
- Warm tongue slices in the sauce and serve.

- Once thawed, keep refrigerated and consume promptly.
